  • The Salmon we smoke is 1st Class Farmed Salmon brought to Jersey by Dunn Ross Fisheries in the fish market.

    Its cured over-night in our smoke house before we cold smoke the salmon sides over smouldering oak chips.

    The finished product is so delicate and refined compared to mass produced smoked salmon.
